Thai noodle soup recipe: a mouthwatering dish to enjoy!
Are you a soup-aholic like me? Well, we all know that soups are winter perfect dish to eat. I know I am crazy! Because, I make them all year long, even in summer when it’s really hot outside. I prefer soups more than anything. I love thai foods especially the spicy thai soup. However, to make this soup you just need a single pot, that consumed less time for cleaning. Here I am going to share my own version of thai noodle soup recipe which is so tasty and plant-based. It is literally good for your health and I always adore this recipe because you can add every veggie that is available on hand. Hence, needless to say, vegetable side dishes are best suited for your health.
Ingredients:

- 1 onion
- 4 garlic cloves
- 2-inch piece fresh ginger
- 250 gm mushrooms
- 2 tsp curry powder
- 1 tsp turmeric powder
- 2 to 4 tbsp vegan red curry paste
- 400 ml of coconut milk
- 1-liter vegetable broth
- 2 tsp sugar
- 2 tsp soy sauce
- 1 tsp tomato sauce
- Half of a lime juice
- 175 gm rice noodles
Toppings:
For easy thai soup toppings, we need these ingredients mention below-
- 120 gm chopped bean sprouts
- 1 chopped Thai chili
- Finely chopped coriander leaves
- A lime wedge per bowl

Step 1
- Firstly, peel and evenly dice the onion. Set aside for afterward.
- Secondly, peel and finely chop the garlic cloves.
- Similarly, peel and chop the ginger.
- Slice and set aside for the later procedure.
- Cut the chilies through at an angle and set aside.
Step 2
- Take a large pot, put it on the oven at medium-high heat. Pour a bit of oil. Add onion, garlic, ginger and saute them until the onions become soft and translucent.
- Then add mushrooms and sauté for a while. When the mushrooms become soft add turmeric and curry powder. Stir for a minute then add the curry paste according to your taste. Hence, I like more spicy so I generally like to add 4 tbsp.
- Reduce the flame on low heat and stir the mixture well with the red curry paste.
- After that add coconut milk which is one of the main ingredients of this amazing thai noodle soup recipe. Along with the milk add the vegetable broth and stir well. Let the soup for boiling.
Step 3
- While the soup is coming to a boil, you have to prepare the noodles as per the instruction of the package.
- Take a heatproof bowl, boil some water.
- Then pour the hot water into the noodles on another bowl stir it well and let it rest until the noodles are done.
- Once the noodles are done rinse it with cold water and put it to your serving bowl.
Step 4
- After the soup has come to a boil, add sugar, soy sauce, tomato sauce, and lime juice into it.
- Then let the soup aside for another 5 minutes to simmer.
Step 5
- Now we are in the final step which is plating. Therefore, it is very important how you decorate the food and present it in front of people.
- However, to your serving bowl which already has noodles in it in a resting mode, add the soup.
- Make sure you also get the mushrooms on the top. Then add a handful of bean sprouts, a few chopped coriander, a lime wedge, and a few slices of chili which is optional.
